It's somewhat problematic having a max session timeout as the running time of any session is all over the board.

I was thinking of offering a knob and then letting sites think about what value they want -- but having a very generous default.

For example, is 7 days a reasonable default? I think a 30 day long session might be rather too surprising for sites.
