I managed to fix the above issue with the two stack overflow pages (this and this)

Specifically this:

export LDFLAGS="-L/opt/homebrew/opt/openssl@3/lib"
export CPPFLAGS="-I/opt/homebrew/opt/openssl@3/include"

and then if that doesn't work:

brew upgrade openssl
brew link --force openssl
pkg-config --modversion openssl
#1.1.1l
